Yield : 35hl / ha. Best grapes are picked at perfect ripeness.
Wine-making : After 4 weeks of maceration,the wine goes into 400 leters new french barrels after the end of the fermentation.
The malolactic is done into the barrel and the ageing last for 2 years.
Tasting : This powerful, elegant wine that is long on the palate and not woody perfectly expresses the depth of Costièes de Nîmes soils.
T°C taste : 16-18°C
Foods : Venison, capon, loin of lamb with Provence herbs, Turbot filet with garlic crust.
Ageing potential : 6-10 years.
