Wine-making : Cooling of the harvest on reception of the grapes. Cooling of the must for natural clarication.
Vinification at a low temperaure.Fermentation stopped through the addition of 5% wine spirit,
when merely 85g of non-fermented sugar remaining. Ageing 3 years in 400 L. french barrel.
Tasting : Garnet red in appearance with some hints of brick red. Notes of cherry, fig and cocoa.
Mellow, not too syrupy, with elegant tannins.
T°C taste : 10-12°C
Foods : As an aperitif, <blue cheese, chocolat pie.
Ageing potential : 5-10 years.
